Two relative newcomers to the local foodie scene are producing notable wines and craft beers, Caroline County style.
Sassafras Shade Vineyard is Caroline’s first winery. Owners Gary and Ann Dudley have taken on this project as retirees with an energy that would put plenty of younger people to shame. Winemaking has been a big part of their lives for upwards of 25 years. That experience is evident in some of the unique varieties they produce.
Estate-grown grapes make for a refreshing change from the typical small-winery fare. One that goes out the door with regularity is Caroline White, a blend of Vidal and Niagara, which, with a two-percent residual sugar, makes for an excellent aperitif. Not to be ignored is the Caroline Red, a blend of Cabernet Franc and Chambourcin. A fine match for grilled foods and red sauces, it is well balanced in relation to acidity, giving a moderate finish that lingers just enough to be enjoyable.
Two of their specialty wines are White Chambourcin and Granny Smith Apple wines. Admittedly, a wine made of Granny Smith apples sounds a bit strange, but it works. The apples are crushed and fermented to create a crisp, clean flavor, not as tart as one would expect, and an ideal partner for pork roast and sauerkraut. The White Chambourcin is made from red hybrid Chambourcin grapes, but not colored by the red peelings. Just a hint of red fruit and spice suggest pairing with piquant foods, such as Asian cuisine, or with pork dishes.
The tasting room is filled with country antiques and, more importantly, a warm inviting atmosphere.

Just down the way at the intersection of Route 1 and Ladysmith Road, the Rusty Beaver is a microbrewery that has become a favorite with those who appreciate craft beers. Founded in June 2013, it has a congenial community atmosphere, thanks to the easygoing, but knowledgeable Brewmaster Austin Ivey. He said the holidays have had little effect on sales, adding, “We just put up some decorations, but our regulars come in regardless.”
The holiday beer, Merry Krampus is a smoked porter brimming with spices. Quake Stout is full-bodied, with a strong finish that cries out for a large reuben sandwich and side order of hot German potato salad. Smashed Bastard is an easy-drinking and very pleasant single-malt beer that is soothing to the palate. Zen, the Rusty Beaver’s version of Black and Tan, is a blend of Quake Stout and Smashed Bastard, and not to be missed.
All beers are available in pints or in 16- and 32-ounce growlers to go. True unfiltered craft beers at affordable prices make wonderful gifts, or something nice to wet your own whistle.
